@labnoon at the moment I use Mulino Marino, which I buy online. You can get small amounts at Eataly and probably elsewhere. It is hard to find good flour in the shops here. If you want to come in on an order online, to reduce delivery costs, DM me.

Hey can I ask what flour you use in Rome? I got some type 0 by Ecor from Naturasi, but after many attempts and perfecting every element I've come to the conclusion that the flour can't absorb water. Thanks!
