I heard somewhere today that you need to let it cool thoroughly. Hmmm…I wonder where I heard that. 😉
@gabrielle_schaffner That was in a Le Creuset casserole, which is fine for a single loaf. I would just reduce hydration a bit and make sure you do good gluten development and bake in the oven.

@simon @12ozbeehouse Really rather good. There is 10% buckwheat flour (and 10% wholemeal) and though it isn’t hugely pronounced, there seems to be a certain sweetness to it that might be the buckwheat. Also a slightly crunchier crust. Crisper
